Northern
Italian Cuisine
Centered
in the Trentino-Alto Adige region, Northern Italian cuinse is a
result of varying cultural influences and geographic environment.
Since its beginnings in the 12th century, both Italian and German
cultures co-habited this area. This dualism remains today and is
evident in everything from the town’s bilingualism to its
cuisine.
Surrounded
by mountains, the land has limited exposure to sunlight. Therefore,
earth-grown vegetables like potatoes and cabbages are grown. Butter
is used in cooking over olive oil, and hearty rich dishes prevail.
Brown sauces derived from meat are more common than the tomato sauces
prevalent in the south of the country where the sun shines for much
longer during the year.
